To Foil or not to Foil?
I've always wrapped my butts in foil when they begin to stall. I'm afraid if I don't wrap that the meat will dry out. Thoughts? It does hurt the bark though.

Never foiled. They don't dry out. Always extremely juicy. Don't bother unless you're in a hurry. Even then I just bump the temp.

The meat won't dry out just because you don't foil. As long as you don't overcook it you'll still have moist meat.

+1 No foil here either. Better bark without the foil.XL BGE, LG BGE, and a hunger to grill everything in sight!!!Joe- Strongsville, OH

Nope...... Only after if using the butt boxSalado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now).

No need to foil on the egg. On an offset stick burner foiling would prevent over smoking and retain moisture. Not required on the egg.

Thx! Are you spraying with Apple juice along the way?
-
Nope. Put it on, leave it alone. Come back in however many hours to get to buttah status. Take it off. Pull and enjoy. Nothing easier.
-
Nope, just set it and forget it till it reached 195 internal. Then stick a thermopen in it till it probes like butter.
I now use Compac Duroc pork which I feel is better than standard supermarket pork. -
Cool. Thx!

Never foiled a butt. Ever. Not once. It will be plenty moist. If need to hurry kick up the temp first but I time it to cook without foil-- easier, and better barkColumbia, SC --- LBGE 2011 -- MINI BGE 2013

I've done it both ways. No big difference, IMO. Unless your going to pull it right away, you are going to foil it anyway. Foiling speeds up the cooking process.Dave - Austin, TX
