Trying for a Cuban pork roast.
two butts on 0130 at 250 ish. One injected with a mojo sauce and rubbed with a Cuban inspired rub one straight swamp venom. We'll check in hopefully some time after sleeping.

Man these things are taking forever. Really low temp as I didn't want to get up early to cook, but hit 194 after 13 hrs and went backwards. Guess I'll bump here shortly.

@Ozzie_Isaac I started with this. Cut the cumin as I don't really like it being dominant and subbed onion powder for onion cause I'm lazy and didn't think fresh would rub very well.

Well crap, somehow I didn't attach. redneck panini pressand finished productoverall, b+ not quite as good as our favorite Cuban joint, but close! Had to settle for Mexican bread because even though we have a huge Hispanic population, not a lot of Cubans. I think Pappi's puts mayo on theirs and I didn't.Not much of a Valentine's meal you say? Well the wife got out parented by a very shrewd couple. Instead of a night with no kids, we had an extra 13 yr old all weekend. If your scoring at home(I'm not) that's 7 13 yr olds and an 8 yr old last night (all boys) and 2 13 yr olds and an 8 yr old tonight. Oh well, after 17.5 yrs, there's always tomorrow. \:D/

@Ozzie_Isaac really easy. Swiss, ham, mustard, Cuban pork roast that I pulled because we love the left overs, and bread of choice.

Thanks @Mattman3969 really easy. No different than a pork butt other than injection, which I never do, and crisping up the bread at the end. Cubans are my favorite sandwich by far and these were really close to authentic, in my eyes anyway.
