The other day I had a premature posting that I see has been removed. What I was going for was below. I was wondering if anyone had done this before. After searching the forum, it looks to me like the answer is no. Got the idea from

Mama and JR are out of town with my BIL who just became a father on Tuesday. Didn't know how they would go for this idea, so why not give it a shot while they are gone.
Started with a pound of bacon. My bacon was not as nice as what is used in the video, so I had to piece things in to make it solid.
I dusted the bacon with seasoning from Arthur Bryant's that my sister brought me for Christmas. (Sorry about the fuzzy images again.)
Into a pound of ground beef, I mixed in salt, pepper and some more Arthur Bryant's. Then using my hands I broke off chunks of the meat and pressed it out on top of the bacon.
We had some left over cheese cubes from a cheese tray my wife brought home from a bank party. So why not use some of it here.
I didn't have one of those mats, so I used my flexible cutting board to roll it up.
On to the large set up with PS and drip pan, running at 350-375. Also picked up a few poppers at the Market when I was picking up some Angry Orchard.
Left the lid down for about 45 mins and we were at 135. Brushed on some BBQ sauce and closed the lid.
Dusted with some seasoned breadcrumbs.
Sliced
And served with a little side salad.
FREAKING AWESOME! The second round was better, when I didn't put extra BBQ sauce on. I would also maybe use the french fried onions like was used in the video.
Will be making this again for sure.

How crispy did the bacon turn out?

The bacon on the outside was not crispy like you want your bacon for breakfast, but was cooked more like you would want for a bacon wrapped filet.
