Corned Beef

I am thinking of making this for St Patrick's day from Scratch, but I want to do a whole 12 to 14 pound packer. Who all has done this and how did it come out? Sounds really good to me.

I just usually make pastrami and the way to do that is to soak it in water for a couple days and change the water out every 24 hours. If you want to do it in a day, cut up some potatoes and put it in the water to help soak up the salt from the corned beef. I then dry the meat off, add seasoning for pastrami and smoke it like I would a brisket. Look for corned beef brisket points if you are doing it this way.
