Mayo'd cheekun thighs

I tried the mayo thing on spareribs a couple weekends ago, but overcooked the ribs so don't have a valid opinion yet on the technique.
Today I had two chicken thighs, brined and air-dried in the frig for 24 hours, and spread a thin coating of mayo and then Montreal Chicken Rub on top. I was patient for once and really let the Egg soak at 400F for 45 minutes before putting the cheekun on, indirect. Overcooked slightly (as I usually do).
Wow. That was the best chicken I've made on a grill. :-bd Will definitely be trying that again.
Will also give spareribs another shot, trying not to overcook this time.

Looks delicious. JK!! Sounds goood though. I did mayo on ribs and really couldn't tell the difference. Need to do a side by side to really see.XL BGE, LG BGE, and a hunger to grill everything in sight!!!Joe- Strongsville, OH
