Busy cook week- first overnight and a ballotine

After seeing all the ballotine pics, I had to give it a go myself- so cool. Delicious and I didn't lose any fingers- win/win! Stuffed with sausage, pepper, mushroom, and cheddar.
Last night, I decided to try my first overnight cook. Put a 8.5# butt on the egg at 11:00 and went to bed around midnight. I was worried about it, but due to too much wine, I slept like a baby
. Woke up this morning to the egg humming along and a 171 degree butt.

Did you roast your ballotine sitting in the pan or was it suspended in the air using a rack of some sort? I ask because I plan to attempt a chicken ballotine sunday.Franklin, Tn

Great work on both counts! I don't do too many overnighters any more because my egg is on a deck...but I love waking up to the smell of smoking butts.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

Looks wonderful. @TN_Sister_State, if you cook the chicken in a CI pan, you get wonderful fond. I just scrape that up with a little water or broth, add a bit of acid (wine or lemon) and spinkle in a little herb that complements the stuffing. Thanks y'all! Getting close to the 13 hour mark- it has been stalling at 172 for about 4 hours. Would be tempted to foil it or boost the temp, but I gotta go visit my Grandmother for a bit... this isn't for an event or anything, so I guess it can take all day if it wants.Middle Peninsula VA

I've never been one to foil, but I threaten it every dang time... the stall makes me crazy. Ended up taking 15.5 hours and I pulled it at 195. If only football was still going, it would be shaping up to be a great weekend!
My two Bumpass hounds- Partner and Abby. Don't let their pitiful looks fool you- they each got more than a fair share. The big one is the size of a small pony and you gotta be vigilant and work quickly lest she goes countertop shopping.

You inspired me to do a pork butt. Well that and my father in laws bday. I'm shelving the ballotine until I can find a crowd to feed. I have a local farm I buy my birds from since they are all pasture birds, very delicious animals indeed and huge. your cook looks awesome.Franklin, Tn
