Spatch Chix w/ Veggies . . throw in a Poblano!!
Spatchcock Chicken last night - indirect over a pan of veggies. The "chicken over veggie" combo has really caught on . . . next time throw in a Poblano Pepper in with your veggies - adds a new dimension of flavor. The rest of the Veg with the Poblano: Yellow-Squash/Zucc/Purple-Potatoes/Sweet Onion/Cherry-Tomato/Red-Bell-Pepper.
Tossed veggies from the Egg in with Quinoa, Feta Cheese, S&P, Tons of Lemon Juice . . top w/ Cilantro, Avacado.
I have been doing lots of SV and other things recently, almost forgot how freaking delicous a simple Spatch Chix on the BGE is . . I could eat it every night of my life and be happy - yum.

@oldgeezeystax Yes. indirect plate setter legs up. to avoid burning, try to create some air flow underneath your foil tray and the super hot ceramic plate setter. The little green feet work ( if you egg came with them ) or you can create the separation by putting a few balls of aluminum foil under the pan. GL.
