OT Skillet fried pork tenderloin sandwiches

So it was raining and I was tired so I did these inside yesterday. Sliced up a tenderloin and pounded them flat to about a quarter inch thick pieces. Egg wash and buffalo and extra crispy pork crumbs for the breading. Thin layer of vegetable oil in a mudium/high skillet. Both topped with cheddar cheese and some dukes and sweet baby rays on one and a new pineapple conconut mango tequila sauce I tried from costco on the other. Even the sad super bowl commercials couldn't bring me down after these......

How did you cut those before pounding? Long or cross cuts?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

@Mickey they were cut across probably an inch and a half thick. I cut one tenderloin into 7.

Thank you. I see my problem now. I was cutting them about 1/2" or so and wondered how yours was so big. I use Panco (?spelling) and an egg dip. Man, my mom used to make these with an electric skillet. Fried pork chop sammiches and some fried potatoes! Doesn't get any better than that. Excellent cook!Steve

@henapple the skillet is priceless it was my grandma's. Its a #10 small logo but its my favorite to use. Its much thicker than the collectible pieces so it sears much better. I would guess it weighs 20 plus pounds. I am actually thinning out my cast iron collection the small one in the back is for sale its a #4 large slant logo.
