First Attempt at a Rib Roast

Cooked a 5lb boneless Choice CAB rib roast on Saturday night with mixed results.  Cooked for approx. 2 hours at 350-375 to an IT of 125, then rested for 30 minutes.  Mouth was watering as I sliced into it but ultimately I was disappointed by the flavor. Apparently I didn't let the VOC's burn off long enough. It was certainly edible but it ruined the flavor of the crust. Can't wait to try again.image
