Cast Iron Love - Chicken Cacciatore in the making.

I was having a hard time decide what to cook supper tonight but finally decided on some Chicken Cacciatore. I had everything here I needed which made it an even better choice. Any way here we go for the initial portion of the cook.
Took some thin sliced onions and peppers with some garlic and sautéed then in the Grandma Skillet but cheated and used the burner on the gasser.

Then browned the chicken thighs

Now here's where the egg comes in. Got the small dialed in at 300° with the Dutch oven getting all warm and cozy. Transfer all the stuff that was previously cooked along with some crushed tomatoes,thyme,rosemary,basil,oregano and a few bay leaves to the egg.

Going to let that simmer for a couple hrs then add some shrooms and leave the lid off to absorb a bit of smoke and let the sauce stiffen up a bit. Once it comes off the egg I'm gonna crank the heat and do some zuke noodles in the wok.

That looks like it is going to be delicious. I think your going to be pleased. The only thing I do different is put the peppers and onions raw. When they are cooked the chicken should be done.

I see where you are coming from @hungry joe. I kinda wanted the veggies to almost cook away into the sauce. We'll see if it works.

Pulled the Dutch oven and let the egg go crazy. Put the wok on for a bit to heat up and then some oil and garlic to help happy. Added the zuke noodles for a quick stir fry

We use a similar one. Doesn't take much space. Gets used weekly.
