crappy beef ribs

so I got these beef back ribs from Publix. Low and slow at 270 dome and about 3 hours they were at 195f. Here is the issue....They didn't look done and they didn't have a nice bark. They probed at 195 and felt like butter. Result was crap....wife liked them. no pics.

I've had better luck with beef spare / short ribs. I was disappointed with the beef backs I cooked, too.I'm Kristi ~ Live in FL ~ BGE since 2003.
