Prime Packer
I was at Costco the other day and they had one of the floppiest packers I've ever found and it appears to have a massive point on it compared to most of the others I've made. I begrudgingly shelled out the $68 and bought it. It was just too nice of a piece of meat to pass up. I started it last night at 11 PM and just took it off at 2 PM. Rubbed with a little bit of mustard and seasoned with Oakridge Black Ops. Smoked over Rockwood with 6 pieces of oak mixed in.
Since this one was pretty nicely marbled, I thought it might be done at a little lower temp than most of the ones I've made. Turns out it was probing like buttah at 190 in the flat. It also had the wonderful "jiggle" when I took it off. It's resting in FTC until dinner. I hope to have some left for a batch of brisket chili for the game next weekend. I'll update with pics when I slice.

Great score-no doubt that will be a banquet right there. Better to be lucky than good any day! Never pass up the chance to grab a prime packer at Costco. Competitive prices and quality beef. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Looks great, I am fortunate to have a local Costco that carrys Prime Brisket all the time for 3.89 per lb. They said they charge less than choice since the prime has more fat.

Hell of a meateorite, I am hoarding a prime packer in the freezer, it taunts every time I open the door.

I really enjoy it as well, and am happy with my most recent attempt. It was good, but as always, I want to perfect it. At least until my fiancé told me she doesn't really like brisket. My JAW HIT THE FLOOR. We discussed, because I thought it was my brisket, but it's brisket in general. Oh well, chicken is easily done while FTC!!!

I think this one was just a great piece of meat.@blind99 - Thank you for the compliment.
