Best place to find 4 or 5 bone racks of plate short ribs?

    Go to the meat counter and ask the butcher if they cut their short ribs in house. Most do and the just ask to buy they plate whole. Last few times I've done it, their has been 2 in the cryo and I just buy that.

    Plate ribs are only 3 bones. Chuck Short ribs are only 4 bones.  I buy mine at Restaurant Depot. I would think that most meat markets have them, but they usually cut them into small pieces.  Talk to the meat manager and see if they'll sell you uncut ones - they cook so much better.

    Fort Worth has a Restaurant Depot.  You have to run a buisiness to get a free membership or you can join the Kansas City BBQ Associaton and get a free day pass.

    @Shiff‌ I am actually heading to RD today with my dad. They have a tax ID number. I did join kcbs earlier this week but havent gotten membership card yet. How are the beef ribs you buy from there packaged?

    They are packaged 2 slabs per cryovac package.  The last time I bought some, the chuck short ribs were about $3.49/pound and the plate ribs were $6.98/pound. This was a few months ago so the price has probably gone up.

    Here is a post of how I cooked some plate ribs. Chuck short ribs would be very similar.  If I had to pick one or the other, I'd choose chuck short ribs.

  • Thanks for the info. Unfortunately the RD in Fort Worth did not have any. Bought an angus Ribeye and some other odds and ends though including a new brisket knife. Neat place! I did, however, find a 4lb slab of plate beef short ribs at Cental Market. Gonna be a good weekend!
