Best MiniMax cook yet
Brought the little MiniMax up to 500 degrees setup for indirect cook. Grilled the Chops until an IT of 140 then pulled plate setter and ramped MiniMax to 650. Did them direct for about 40-45 seconds each side. It helped give them a nice crisp bark but these babies were plenty moist on the inside! Dynamite! I'll be doing this cook again in the very near future. Very flavorful!
This little MiniMax is a real cooking machine!
Love how it comes to temp so fast and still puts that special EGGfect on the food that my XL does!

Look great! I do all of my lean pork cooks with an herb crust. Such great flavor. I started having my herb paste and brush out at the egg with me. I sear high heat without the herbs then apply the herb crust after. If you go too high with the EVOO and herbs they will burn some and it can add a less than desirable taste. Yep- my kids wonder why it's such an attraction to sit out by the BGE watching the fire through the ash screen, savoring the succulent aroma emanating from the Big Green Egg and hearing that hollow echo inside the BGE's dome reflect heat back onto sizzling meat or a pizza that's cooking all while having a cold beer in hand and listening to some great tunes. Thankfully, they all don't want to join me in that venture and it's sort of an escape, meditative state that is so enjoyable.
