Cast Iron

Starting to get into cooking with Cast Iron.  What are some ideas for using skillets and cast iron accessories?

    Try cast iron cheeseburgers. You won't want them any other way.

    I only use my CI for searing and searing only. Burgers. chops, steaks, kaboobs, lamb, etc. When I reverse sear, I have the CI grid in the absorb some heat; which will decrease the wait time for nuclear temps.

    Searing and long, moist cooks(stew/soup, braising). I have multiple griddles and skillets that are traditional CI and all my pots are enameled.

    Traditional diner burgers are amazing on my CI(or baking steel - similar concept). I like pub-style burgers like that or grilled if I want the charcoal flavor.

    Eggs and bacon on a cast iron griddle for breakfast.

    Stews and chili in a cast iron Dutch Oven as well as assorted side dishes like Keri's Beans.

    You can even bake breads in the DO.

  • I've got a CI dutch oven that I've used for chili on my BGE which was perfect.  just trying to get ideas for using skillets and griddles on the egg.  thanks for all of your suggestions.

    I use iron for everything that would otherwise be on the stove top.

    My drip pan is iron, skillets get mushrooms and veggies sauteed, then brought to the kitchen counter.

    Harder to clean than steel, but indestructible at higher Egg temps.

    I have several smaller cast iron pans and bowls that I use to grill onions and make mac'n cheese in.  Still trying to replicate the mac'n cheese I had at Three Floyds Brewery last year.  Amazing.

    I've even baked a brownie on the Egg using cast iron.  Limitless.

    BACON, eggs, veggies, Steak, burgers, fish, scallops, shrimp, chicken whole, spatched, quartered or fillet, beer brats with onions, peppers and kraut, CI DO brisket chili. Much much more. These are things I've done on the egg with CI.

    My CI Arsenal..looking for the right DO
    Griddle - searing- breakfast-
    Frying pan - roasting - vegs - scalloped pots etc.
    Square frying pan - same as above plus cornbread - cobblers - etc

    Thank you. Pretty easy too. Use more sauce than you think you need. Pretty thick crust.

    My allclad set rarely gets used as we use cast iron for almost everything. Almost nothing you can't use it for.
