Strip steaks

I asked the family what they wanted for dinner and it was unanimous, steak! Cooked direct over 700○ 2 minutes per side then shut the Egg down and let me sit for 5 mins. Pulled them off the Egg and had it with couscous and cucumber salad.imageimageimageimageimage

    Very nice... With all the reverse searing I've been seeing on here lately I was beginning to wonder if anyone made steaks this way anymore. What's the story with reverse sear anyway?

    I can see that steak walking off the screen. I like med rare but mooooooo.

    I do not reverse sear. To each his own. I sear both sides. Put on plate with foil, dial the egg back and enjoy cocktails while it comes down then finish off.
