Warming up with some wings

Pretty cold, for memphis at least, but heading out of town for the next week so wanted to fire up the egg one last time
Had 18 whole wings from Costco-- left 8 whole and broke the others down
Set uncovered overnight in fridge to dry
Wholes: victory lane sweet bbq rub
Parts: plow boys jerk rub
Tried @Dyal_SC jalamango wings sauce but didn't have the fresh pineapple so improvised with some left over pineapple/berry fruit bowl from the wife's bday and turned out pretty good -- can't get enough of the mango chutney
400 indirect with a little maple wood chips for about an hour for the wholes and 35 for the parts
Served with some sweet potato chips done inside by the wife with her mandolin-- still trying to get these sweet potato chips crispy in the oven, ideas?

Don't know why they are not crispin up for Ya .. I usually do mine indirect 375 for about an 1hr 15 mins and they get a good char and are crispy outside ... I guess the only difference might be I do mine with a dry rub and no sauce ?? They look though nice cook

@BigGreenGator the wings are getting crisp--I do them with just a dry rub and toss in sauce Once I pull them off. Just can't get these sweet potatoes to crisp up how I want them. Trying not to fry them either. Also, go Vols. \:D/Memphis, TN ----> Chattanooga, TN

@theyolksonyou will do. We've tried parchment/wax paper, more oil/less oil, baking rack/on the pan. May just need to get a baking stone and put them on the egg.Memphis, TN ----> Chattanooga, TN
