Smoked beet salad

I love me some beets.  Threw some on indirect with pecan for a few hours.  Skinned, sliced, tossed with vinagrette, and served with greens, goat cheese, and candied pecans.  recipe is based on ina garten's "balsamic roasted beet salad" (BTW difference between dome temp on the BGE thermo and grid temp on the maverick was as much as 130 degrees.)

Love beets - some people think they taste like dirt.  I love dirt.

I like beets, don't eat them enough though, looks good with the goat cheese and greens, I love goat cheese.

It's good idea to warn everyone to wear gloves when you're handling cooked beets!

Thanks @anton‌ I don't eat them much either - wife doesn't like them - I need to cook them more anyways.

@Judy Mayberry‌ I wore gloves for the first time last night when I peeled those suckers. No pink hands for once!
