Hello all, I have just recently purchased an Egg and this thing is awesome. I am gonna cook some ribs this next weekend and i was wondering if anyone had any tips or tricks that might be helpful.

I cook them indirect at 250F; 4 hours for baby backs and 5 hours for spares. Remove the membrane and rub them with your favorite BBQ rub. Some folks wrap them in foil for an hour or two after the rub is set. I'm not one of those folks. I do spray them several times after the rub is set with a spritz of 1 cup cider vinegar, 1/2 cup Captain Morgan's, and 1/4 cup of orange blossom honey or pure maple syrup.[p]Be sure an put a temperature probe on the grate where the ribs are. Depending on how you're set up the dome temperature can be significantly higher or lower than the temperature on the grate.

You can see a complete picumentary of one way I do them on my website in the cooks section.....should help ya out fine...but I do stress the words "one way" as there are hundreds of various ways to cook ribs with success...HTH[p]Wess

I have success with a variation of WessB's method. I do 3-1.5-.5 on the indirect-foil-direct method, with the last half hour cranked up to about 350 for a little charring.
