Hoss - This is for You - Texas Cush-Cush
Spring Chicken
Posts: 10,255
Hey Hoss... I'm pretty sure you've had something like this before.
My Sweetie grew up a little bit in Texas. And as everyone knows, Texas folks have a different way of cooking than say those Cajuns over in Louisiana where she finished growing up. She was full grown when I won her in that poker game.
Anyway, this morning she said she wanted some Texas Cush-Cush. And I obliged her with this:

Yes, that's cornbread under that soft fried egg. And some turkey-ham on the side.
If you've never had it, try it with some of that Lucky Cornbread you had leftover from your New Years Day meal. If you don't have some, make some. It's worth it.
Crumble up that cornbread a little bit an a skillet with a goodly amount of real butter, and fry it while you're frying an egg in another skillet, yes also with butter.
Then just lay that perfectly fried egg on top of some of that cornbread. That's Texas Cush-Cush.
And eat your heart out.
Those Cajuns cook it a different way and don't put no egg on top like us Texans. They like it crumbled up in a bowl with some milk and sugar, or with some cane syrup, or whatever. Cajuns like just about everything on everything.
Anyway I figured Hoss would like it. I might even cook it at an Eggfest one of these years.
