Chicken Bomb "Roll"

Bought chicken thighs to make chicken bombs for a church New Years thing tonight. Was somewhat of an impulse plan and didn't realize I bought boneless skinless. They were in pretty bad shape so I decided to pound them and make a chicken bomb roll. Jalepenos sautéed with garlic, salt, BBQ sauce and butt rub. Then rolled into some cream cheese and mozzarella cheese. Roll was made and wrapped in Saran placed in freezer for an hour to firm up so I could bacon wrap and truss. Really excited about this. Made 2 of them and Going on egg around 350-400 later this afternoon.

Bravo! You can also increase the width with more thighs. I make like a 5 pound roulade with them.

I'm jealous. I was just trying to figure out what to cook tonight and this is definitely on the to do list next time I do not have my two year old at my feet during the prep. Nicely done as always MCN.I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

Well here they are! Bacon was getting pretty done before I sauced. Wanted to keep going cause they were a little limp in the middle but to temp. Pulled and letting get a little rest on before I slice em.

Pretty good. Should have up'd the temp and cut back on the smoke. And the jalepenos seeped out and it is HOT!!!! Tasty, but gets your attention.
