Holiday Egging

My daughter, son-in-law, son and grand kids were with us for several days for Christmas and they all love food cooked on the Eggs. I certainly burned a few pounds of lump while they were here. I didn't take pictures of all of the cooks, but here's a few, The pig shots didn't last very long at our Christmas Eve party. I cooked a spatchcock turkey for Thanksgiving and my daughter requested the same turkey for Christmas Day. I've cooked turkey everyway possible and spatchcock seems to be everyone's favorite. I injected the turkey with a spiced butter and beer injection. This was my first attempt at turbo ribs. They were done in 90 minutes and just as good as low and slow. I have to admit that I had my doubts when others posted they were just as good, but I'm now a turbo convert. These were glazed with a raspberry/jalapeño jelly. The chops were dusted with Grub Rub and salt and pepper before going on the CI grill. Happy New Year! imageimageimageimageimageimageimage
