I picked up a 23 lb fresh ham that I want to cook like a butt, e.g., pulled pork so I intend to take it to about 190 and pull. Will just score the skin and leave it on, cook with skin side up. Any idea how long I should expect to cook it at 225? Thanks.

I am not an expert , but is that the right cut of meat for doing pulled pork. I thought the shoulder with the fat etc makes the best pulled pork. I have left the front leg on the shoulder which is usually called the picnic ham, and that part was not anything special!cheers
