Amazing, the only thing I would change would be more seasoning. Also, seared it at 600+ ... I would go 500 Max!

Just be careful not to over cook it. The meat is so lean that I can see it turning into a hockey puck. On the other hand, if you warm it up for 10 minutes at 350 degrees, take it out of the egg, turn up the egg to 500 and put it back on for 1.5 - 2 minutes on each side... (Open Lid) it will turn out perfect.I really prefer this over beef steak. I worked late tonight and ate it around 8:30 pm. I thought ... bad idea eating steak that late. Ended up feeling great after eating it. It doesnt make you feel sluggish at all like beef. Probably because its very lean. Just make sure you oil it and put sea salt and your rubs... marinate it for 1 hr if you can and don't be shy with the rub.
