Spares:   3-2-1

BB's: 2-1-1 or 2-1-0.5

@Jeremiah You make a good point, BB's are ridiculous in price around these parts.  A full slab of spares cost around $10 at the local grocery, where BB's were hitting the $33 price range.

Hours.
321 means you smoke em for 3 hrs, wrap them with foil coated with something (butter, honey, etc) back on for 2 hrs, then unwrap and return to egg for 1 hr. The foil "crutch" allows for exceptional fall off the bone ribs, but some think it's too much.
