Vertical Chicken

I have been cooking chicken on a vertical rack but the problem has been it is too juicy and even mush in some parts. I have varied the target internal temperature from 165° to 180° and everything in between for several cooks with the same results. I have also varied the grate temp from 325 to 375 with similar results. What am I doing wrong. The chicken tastes great but the boss says it's too mushy.
