Whole smoked fresh ham skin on or off?
Gonna do a whole smoke ham for xmas and wonderering if its mo betta with or with out skin and ANY suggestions..plzzzzzzz
Prep, temps etc.
I would much rather be able to say I was glad I did than wished I had........

OK, then you will need to cure it before smoking. Cen Tex did a great job documenting it.I did this same one and it is excellent.Note, the pink salt mentioned is not Himalayan pink salt, but rather Prague Powder #1, etc.They/Them
