Damper/ rain + rust, what to do?

Hey Everyone, so tonight I am making salmon and it's raining lightly. I read that the damper gets rusted if wet. Any suggestions?

  • Dry it in the egg on shut down.

Wipe it down with fat or spray with oil when you're done.  Tools are meant to be used.

Then put it inside the egg and put the ceramic cap on. It will be fine.

You've already heard the good answers, so let me suggest an alternative approach.  The best way to avoid rust is to ask for a SmokeWare cap for Christmas.  No rain on the food, no snow on the food, no need for the tender loving care that CI demands.

I have a SW cap. The reason is I busted my ceramic and got tIred of foiling my daisy wheel on shut down. The real benefit to me is it doesn't flop around when you open the dome. If all you're worried about is a little rust. Relax and save your money. Most of the rain will evaporate off your daisy wheel because it is hot while you're cooking. You can stick it in the egg while it cools down. Oil it if you want not a bad idea at least occasionally. Even if it gets rusty, no harm no foul. Worst case, get it sandblasted at you local body shop for a few bucks and spray with high temp paint.

Wait. What's wrong with snow on the food?

I hate it when I go to the kitchen for food and all I find are ingredients!

Never had a problem.  I put the metal cap on the grill after a cook and close down with the ceramic topic.  I assume the remaining heat dries the metal cap.

A seasoned damper will not rust; just like a seasoned cast iron pan. Once that protective barrier is there you are good to go.

Oh Michael, I misunderstand ... it's not that the fire went out ... you're cold smoking ... yes?
