Chorizo hash brown bites (thanks @CincyTiki for the idea)

Saw these breast fast bites on here a while back and wanted to try ever since
We did a day after thanksgiving Mexican meal with my family to break away from the left-overs
I used 2 potatoes, grated and strained extra liquid off
About 1 lb chorizo, 1 yellow onion, 5 eggs, some DP Fajita-ish, chopped jalapeños, about 10 oz cheddar and pepper jack cheese
Cooked the chorizo with onions in the CI first at about 400 for 35 minutes then let cool and let sit on paper towel to get a little grease off then mixed it all together in bowl before filling muffin pan with mixture. Back on indirect for about 35 minutes and turned out great. Added some hot sauce to mine and and have some leftover for this morning

That does look good.I finally figured out the difference between mexican and portuguese chorizo, but it looks like there's different kinds of mexican chorizo, too. The stuff I can get falls completely apart when cooked, and its hard to get the grease away from the meat as its so fine it almost "pours" with the grease. Yours looks a lot more appetizing.Oh, and you never want to read the ingredient list on a package of chorizo!___________
