8lb bone in breast....to foil wrap or not?

Hi all I am planning on doing a breast today. It's 8lbs and I brined it 12 hours. It has been sitting dried in the frig for another 12 hours. I will do indirect with a grid temp of 300-325. I wondered should I foil wrap when it hits 160 to rest and how long can I keep it in the foil/cooler befor carving/eating? I am planning on it taking 90 mins to 2 hrs and am trying to plan for the rest of the Turkey Day meal. thanks. Sheree
