Pulled pork on thanksgiving

Happy thanksgiving! I am cooking a 4.25 lb shoulder in large BGE. I usually cook a bone in. Today I am cooking a boneless at 230f at 2 hours per pound. Any thoughts if I should FOIL at some point..... I usually cook a bigger shoulder and don't want to risk drying it out. Ps- I am using a waterpan w Apple cider vinegar and water mix. Put it on egg at 330am with a cool 2f above zero up here in Minnesota!!!!!! Brrrrrrrrrr
