Which lucky person gets the dark one on the left? They are all nicely marbled, but that left one I'll be the one that will reveal the greatest benefit from dry aging.

Well...... They were absolutely fantastic! Unfortunately I over cooked them just a tad, but it really didn't matter. The flavor was deep, much more than store fresh steaks so I definitely could tell a difference. I was surprised how thin they got after cooking them. My wife was happy from what I could tell, and she didn't flinch when I mentioned going 45+ days next time. @rrp you convinced me on the 45 days but happy wife happy life. Thanks for everyone's insight walking me through dry aging. FYI I cooked them on the baking steel at 500 and I got a perfect crust. By far the best steak I've had, and I've occasioned some high end steak houses in my area. Worst part of the meal was that I couldn't finish it :-(

Your pictures sure looked great and glad they made SWMBO happy! Dry aged steaks cook faster since tasteless water has been evaporated from the meat cells. Cooking to temperature is the best way. -
