Corn beef brisket

Unknown
edited November -0001 in EggHead Forum
I have a corn beef brisket on the Egg at right now. The internal temp at the moment is 127. What temp am I looking for to get medium rare. I notice the forum recipe's take a brisket at 170 to 200. How about taking it off at 145 internal?[p]Jerry

Jwirlwind,[p]Jerry, I've got one on myself as we speak. First off let me say I know absolutly nothing about it but have been reading a bit this morning. I found that a smoked corned beef is called pastrami, don't know why. Anyway, I found this site about pastrami and I'm cooking my corned beef to about 160.[p]Don't know if that is any help but thought I'd toss it out.[p]Rick

  • Salmon,
My concern was that I did't over cook the meat. I believe this is going to be one great piece of meat. I put roasted garlic, garlic powder, onion powder and lots of black pepper on it. Using hickory chips. yum yum[p]Jerry
