Chicken Bombs - 1st Attempt

... and it was a success. Pretty easy and everyone thought they were delicious and unique.
Used boneless skinless chicken thighs, cream cheese & cheddar mix, BBBR on chix, bacon, and Sweet Baby Ray's vidalia onion bbq sauce. Cooked at 350-375 raised direct for about 50 minutes or so.
Thanks to many on this board for directions and inspiration.
Next up... brined 20lb bird for Thanksgiving

First time I made them, I cut the tops off the jalapeños and scooped out all the insides. Big mistake. What was still inside were the veins (that gives the pepper the HEAT) Damn they were hot! Now I cut em in half and clean them real good. Nice pictures!I've slow smoked and eaten so much pork, I'm legally recognized as being part swine - Chatsworth Ca.

I made a set of these last week with pepper jack instead of cream cheese. I liked the pepper jack, but I think a blend of the two would be perfect. That's the next go-round.
