Pork Chops - In the rain.

Wondered what I should cook this week end, and after a hellish trip to the grocery store ( forgot it is the weekend before Thanksgiving)  decided on pork-chops would be nice.

Thick Center Cut, bone in.

Rub down with freshly grated ginger, not micro-planed, but crushed with on a ginger/chocolate board.  (these things are getting harder to find)

dusted with Adams Reserve Spicy Aloha.  I like this a mixed a lot, dried pineapple, sea salt and a touch of habanero.  I have found that using fresh pineapple king of pickles the meat and an odd texture can develop.

And I am also planning to grill some fresh pineapples spears, coated with a teriyaki glaze.

Corpus Christi, Texas.  LBGE x 2, Weber Smoky Joe, and Aussie Walk-About
