Tonights Stuffed Pork (pic heavy)

The build didn't exactly turn out the way I had envisioned but it tasted great. I need to learn to stitch and tie. I wanted the meat to be flatter, didn't happen. Stuffed with deer sausage, shrimp, roasted peppers and garlic, spinach and smoked gouda. Cooked indirect, temp bounced between 300 and 400 and probably cooked almost 1.5hrs.
