Doing (3) 3Lb chuckies indirect over apple wood and fogo lump. Rubbed with combo of dizzy dust, raising the steaks and salt lick. Going to pull these and serve tomorrow night at Giants/Cowboys game tailgate. I'm thinking I get the smoke in these for a while today and then throw in the fridge overnight, wrap and into the oven a few hrs tomorrow AM then FTC for travel to the game.
