Maple Bourbon Pork Chops

Pork and sweet potato seem to be popular tonight.
Pork chops were brined for 3 hours.  Never done that before, but it sure made them moist and flavorful.  Cooked raised direct most of the way, then dropped to regular height direct at wide open searing temps to finish.  Glaze was OJ, maple syrup, bourbon, dijon, mustard, cayenne, brown sugar - from fine cooking . com.
