Sweet Potato Brunch Casserole

Ingredients:
6 turkey sausage links
3 turkey bacon
2 medium sweet potatoes (cubed)
1/2 medium sweet onion, diced
Egg beaters,1 1/2 cups or 6-8 eggs beaten)
1/2 tomato
1/4 cup is shredded cheese (optional)
1.Preheat oven to 350. If in egg raised indirect would be ideal in CorningWare per NPHuskerFL.
2. Cook bacon and sausage, let cool
3. Saute sweet potatoes and onions in olive oil until potatoes are soft (or to desired texture), let cool
4. Spray or lightly coat an 8×8 square pan, or pie dish, with desired oil.
5. Add bacon, sausage, sweet potatoes and onions to pan, mix together.
6. Add egg beater to small mixing bowl, add desired spices (I added 1/4 tsp Himalayan pink sea salt, 1/4 tsp, ground black peppercorn and a dash of cayenne. )
7. Pour eggs over everything in the 8×8 pan.
8. Add slices of tomatoes and sprinkle cheese, if desired.
9. Bake for aprox. 50 minutes until knife comes out clean from center of dish.
10. Let sit for 10 minutes, cut and serve.

This would make for a errr, different breakfast food here in the hills of NW GA, but it sounds good. My country cook mom would definitely look at me funny, but she'd eat it. Dad on the other hand. [-XThink I'll give this a go. Thanks for posting.
