Turkey Tenderloin w/ apple juice in drip pan ?
I bought my first turkey tenderloin and with pork tenderloins I usually use a v-rack in a drip pan with the pan filled with beer. I was thinking of using apple juice in the pan for the turkey tenderloin but didn't know if it wouldn't burn up because of all the sugar. Any suggestions ? I also cover with yellow mustard beforehand and then put on a rub. Saw some stuff about marinating in white wine the night before or some sort of white wine vinegar and other spices?

Go ahead and use apple juice in the pan. It's not going to burn if you start out with enough liquid to prevent total evaporation. Take a peek half way into the cook to check. The turkey tenders will will be done at 165 degrees internal, let it rest before slicing. As far as the wine marination- it's up to you. Farm raised turkey is allready tender and moist. Personally, I'd keep it simple. The mustard rub with seasoning is pleanty of added flavor for turkey. A little pecan smoke is nice also. Good luck.
