Chicken Enchilada Soup A La BGE

Before I start, forgive me, I forgot to take a picture during or after my cook tonight.  I do have a picture of the soup in the container, but that's no fun.  

I've been wanting to try some soup recipes, and just haven't known where to start, so I was browsing at my local Fresh Thyme market a few days ago (when I bought the garbage fish) and found a mix by the Frontier Soup Company http://www.frontiersoups.com/ - Obviously I'm not affiliated with them in any way, but feel free to peek at it if you want.  The soup mix was on sale for $4.49 and it was super simple.  

First I pounded some Boneless, Skinless Chicken Breast into a thin piece, covered it in a little Raging River, and then grilled it up for a few minutes.

While that was cooking, I added 6 cups of Chicken Stock (Costco) and 1 can of salsa verde.

Put it all back into a dutch oven and into the egg it went for about an hour to simmer.  - I will be doing this weekly and will be trying the other ones as well.
