I have both baking steel and stones. At the same temp, a pizza might take 5 minutes on the stone but the bottom be burned to a crisp on the steel in 2.
The thermal transfer of steel is an order of magnitude higher than that of ceramics. Ceramics are good insulators, like glass.
So what happens with the steel is the convection and radiation heat on the air boundary of the dough cooks in a slower ratio to the fast diffusion/conduction of the dough-metal contact.
In effect, dough will cook more unevenly unless you change the design and keep the steel at a much lower temp than the air.
