Country Style Ribs

Had these ribs (butt cut) left over from my last crock pot carnitas.

Set up:  Raised direct 400*

Fuel:  Rockwood-first cook on RW

Smoke:  Peach- just because I had it and have never tired

Rub:  DP Swamp Venom

Sauce:  Sweet Baby Ray's Honey Chipolte

This was my first cook on RW.  I was very impressed with the cleanliness of the lump.  It lit and was immediately emitting that beautiful clean blue smoke.

These elicited a "mmmmmm" from my 12 yr. old carbovore, and, of course, the sorry Lab was mighty proud to get some of the trimmings.
Sides: Sweet corn and Portobello pizza mushroom tops (didn't coordinate well with SWMBO, but worked out ok)
