Help! pork butt done early!

I put a 8lb pork butt on and then wrapped it in foil at 160 and it took way less time than i was expecting... I was hoping to have it for the monday night football game (i'm on the west coast so it starts right around dinner time :) )

I want to take it off around 203 which should be in the next 30 mins or so, and I want to let it rest in the cooler for a few hours, but that still won't get me to game time... any thoughts on what i should do?

    It can rest wrapped in towels and in a cooler for 4-6 hours.

    I've gone upwards of 5hrs with a prewarmed cooler.wrapped in foil and a couple of old towels. If you have a Maverick or similar you could leave the probe in while the butt is in the cooler
