Looks right to me as for the bottom vent. I know nothing of the smokware cap. Maybe @rrp or someone running that cap will chime in. @rrp is a long time user of the smoke ware cap.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. My 2nd favorite BBQ was discovered in a small town" Leon springs" east of San antonio Texas. The name of the place was "Rudy's" .... That was the first time I ever tried beef brisket...it is amazing. So...my next attempt at a low and slow will be a a brisket I hope.Concord, NC. family = 1 XL BGE -1 Large BGE - 1 MiniMax

@BillyLoveEveryone has found the technique that works for them. I egg butts at 280-300 dome temp. For an average 9lb butt it takes 9.5 hrs almost every time. I do use a drip pan with water. Not necessary, but that's just how I do it. I leave my top vent 100% open, whether I used BGE daisywheel or my newer smokeware top that I have started a few months ago/ no difference for me. My XL egg requires almost completely shut bottom vent to stabilize at 250. So about 1/8 inch open is right at 280-300.As others have said, catch your temp on the rise about 50 before reaching setpoint, then adjust vent to hold where you want it, after the initial vent adjustment, make VERY small changes if needed and wait 45-1hr between changes.I also never foil while cooking. I have never had a problem with getting dried out, and always get great bark. But like I said, everyone has their preferred methods. Not wrong...just different. What size egg are you using? I have an XL and I have used a large at an eggfest. There are some slight differences along with differences in each cut of meat. And....where are you located? Alot of us add our location to our signature. Gotta learn the picture posting thing.....if you don't post pics...it didn't happen !!!!I use a Maverick 732 to monitor meat IT and temperature at the grill level throughout the cook. It gives you a confirmation on your dial dome thermometer and allows you to keep the top closed until completely finished and ready to FTC your cook.Enjoy the forum, hopefully, I didn't confuse you too much !!Donnie

You're almost there Bro !!! I use a pair of Channel Locs to grab the bone and give it a little twist to make sure it has loosened up....after reaching 196 IT temp. This combination hasn't failed me yet for pulled pork!!!Get that picture thang figured out....I'm ready for some food porn !!!!
