Hi drbbq,
I really like your book - the brisket schmear prep looks great. Which of the brisket cooking methods do you use for the BGE, the 12 hr no peeking, or some other method using a mop, etc. ?

    Winddreamer,[p]No peek for me. You might check at 10 hours, but not much before that. Dome temp 250 and a big whole brisket. FAT SIDE DOWN over a platesetter. I never mop brisket.[p]Have fun.
