Grilled/Smoked Chicken wings with Guavacue sauce.

I loved smoked chicken wings ! Nothing beats throwing on a few dozen wings for a couple hours and just feasting on them. My family likes the skin on the chicken to be a bit “crispier “. I came up with this recipe to meet them in the middle.

Ingredients:

  • 3 pounds chicken wings, cut into drumettes and flats
  • 1 tablespoon Kosher / Sea salt
  • 1 teaspoon fresh ground black pepper
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/8 teaspoon cayenne (start small and add more if you like spice)

  • Preparation :

    • First set up the Big Green Egg for indirect cooking ( legs down ) and add chunks of apple or cherry wood.
    • Get the temperature up to 300-315  degrees and then go inside to start on the wings.
    • While the smoker is getting itself ready, throw together your rub and mix thoroughly.
    • Get your smoker at a stable 300 – 315 degrees and let them smoke for about 45 minutes.
    • Once the wings have cooked on the smoker for 45 minutes, the meat should be cooked through.
    • Remove your wings and then remove the plate setter. ( BE CAREFUL !)
    • Fire the Bige Green Egg up to about 450 degrees.
    • Put the wings back on for about 2 minutes on each side. You should see some nice grill markings !

     

    Big Green Egg Smoking 

    The Guavacue Sauce 

  • Take your favorite BBQ Sauce add 2-3 tablespoons of Guava jam or jelly in a small pot on the stove until heated through.

  • Brush this on your wings on each side let them cool for a sec and then enjoy !!

  • Smoked / Grilled wings with Guavacue sauce

    Its not, I added that I just use guava jam from Trinidad. Ive always liked it as a child and my mom ships it to me... @gatraveller

    That's one. I have a family member that also picks them off the tree and makes and jars it. So freaking good. No preservatives which means once I cracked it open I have a few weeks to finish it or it gets hard and grainy. Matouks brand is amazing too. I'm pretty sure you can buy it here in the US.
