picnic over brisket

have a bone in picnic at 9.5 pounds and a 7.5 pound flat. how much of a time difference between the two, will be cooking at 225. also with the picknic on top, would you cook the brisket fatside down

    I'm on the side of cooking brisket fat side down. Don't matter if there is anything on top or not. My feeling is that the exterior fat layer on a low and slow brisket doesn't juice and run like on other cuts of beef. So, works better to me as a buffer to help keep juice in the meat.[p]I think your cooking times are going to be pretty close on these but I haven't got any good experience with a picnic up in the air and a brisket on the bottom.

    Fire em in at the same time. They may not finish at exactly the same time, but the less dinking you do with the lid open, trying to put fresh meat in with something already in place etc etc,the better off you'll be with the finished product.
    Shoulder over the exposed meat face of the brisket, run 225-230 at the grate, indirect set-up and I can foresee some tasty que coming your way in 12-14 hrs or so.
