Stalled at 169
Hey all,
Looking for a little feedback here. I am doing my 3rd Boston Butt and it has been stalled at 169 for about 3 hours. I know this happens as it did in my first 2 cooks, but didn't last this long. I bumped the temp up from 250 to about 280 and not seeing any movement. Should I be concerned or ride it out? Thanks in advance!

No concern. Every butt cooks differently. If you are in atone crunch raise the temp or wrap.

Great. Thanks for all the feedback. I am not is a hurry as we are planning to have it tomorrow. My main concern was that it has been on for about 12 hours.
@Mattman3969 I have a wired probe in the meat, plus I checked it with a regular meat thermometer to make sure my probe was correct. Since my post, I have moved up to 172 so hopefully that means I'm over the hump.LBGE, Suwanee, Ga -

Since no hurry and you were in for a L&S I'd just let it go. If you were planning on reheating tomorrow I personally would bump the temp and get it done so I could sleep tonight. But that's just me. Thanks guys. I bumped it up and it is settling about 320. Internal temp is now at 176 so we are moving.
Another quick question. I usually pull the pork after wrapping it and letting it rest an hour or two. Since I am not planning to serve it until after church tomorrow, should I wrap it and keep it in a cooler all night or wrap it and put it in the frig after it rests a little while?LBGE, Suwanee, Ga -
