Eggtoberfest Porchetta's

My Porchetta's are prepped and ready to go on the Egg tomorrow at the Eggtoberfest. Pork Loin from Costco cut in half and another from 1/2 loin. The Loins and stuffed with a paste I made from fresh Rosemary, Sage, Garlic, EVOO, Sea Salt and Cracked Pepper. I butterflied the Loins with the 14" Victorinex Breaker I bought on @SGH recommendation (thank you), this thing cut the loins like butter, I spread the paste on the loins and rolled them, then spread more paste on the pork belly and rolled the loin into the Belly and tied, the third 1/2 loin I wrapped in bacon. All three wrapped and in the fridge for tomorrow. I will post the finished pics after the fest. Thanks for looking.

    The loins look and sound awesome.  I am digging that knife.  Just curious- do you think a 10 or 12 inch would work just as well?  14 seems like a big arse knife.  


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    Look at this for a size reference. Here is the 8" breaker upside a 10" fillet knife. Notice that even though rated 2 inches less, the breaker is still more knife. For general kitchen and subprimal work, the 8" breaker is a excellent choice. image
